After the harvest, keep sprouts in an aired container in the fridge for up to a week. Seeds should be stored in a dry and cool place away from sunlight. You can buy organic arugula seeds in bulk as they can stay viable for up to six years. Note that Organic Arugula Sprouts taste milder than mature plants. How to Grow Organic Arugula Microgreens:

• Take a 10x20 plant propagation tray and fill it up with 2 inches of soil • Make sure the soil is free of debris, and the surface is flat • Wet the soil thoroughly • Take 1oz (30ml) of arugula seeds and equally distribute across planting surface • Cover the container to block the light and place it in a low-light, cool area (70F/21C) • Keep out of light for 72 hours, and mist with a spray once, daily • On day 4 or 5 microgreens will reach 1 inch. Uncover and place into a well-lit area • When greens reach 3 inches and produce open leaves, they’re ready for harvest • Cut microgreens about ¼ inch above the soil • Store dry. Enjoy up to 7 days
