Ground cinnamon is the spice that comes from ground cinnamon sticks. Cinnamon sticks are made from the inner bark layers of Cinnamonum trees. The difference between the organic ground cinnamon spice and organic cinnamon powder is that the powder has a much finer texture while the taste and flavor are the same.
The taste and aroma of organic ground cinnamon spice are delicate, sweetish, slightly pungent, and warming. It is used mainly in confectionery (cookies, muffins, cakes, gingerbread, fruit pies) and generally in sweet dishes (puddings, sweet pilaf, compotes, preserves, mousses, jellies). Cinnamon goes exceptionally well with those dishes that include apples. It is also often used in fruit, mushroom, and meat marinades as well as it is indispensable for mulled wine and punch. Cinnamon goes well with lamb, rice, ham, or minced goose.
In Eastern and Central Asian cuisine, cinnamon is used for cooking hot and cold poultry dishes (turkey, chicken) and main lamb courses (fried, stewed). In China and Korea, it is used to season fried pork. Cinnamon improves and ennobles the taste of fatty meat. Organic ground cinnamon is a perfect ingredient for a wide variety of pilafs. In modern Western European cuisine, cinnamon can be found in trendy fruit salads and vegetable salads. It goes well with spinach, carrots, red cabbage, and apples, quince, and pears.
If your recipe mentions cinnamon sticks, but you have ground cinnamon, it is not a problem. One three-inch stick is the equivalent of a half a teaspoon of ground cinnamon. It is also important to mention that you can buy organic ground cinnamon in bulk and do not worry that it can spoil because its storage time is up to 1.5 years.
