Working with whole-grain kernels means that all its parts - germ, hull, and endosperm along with nutrients they contain, are retained. You are probably wondering how cornmeal differs from corn flour, and the answer is - texture. Corn flour is very smooth while cornmeal is kind of gritty. Food to Live Organic Old Fashioned Yellow Cornmeal is finely milled but is still not as fine as flour. Cornmeal may be also confused with corn grits since they look very alike, however, corn grits undergo a special softening process and are treated with an alkaline solution prior to being milled.
